Jamie Oliver’s gorgeous marinated salmon cooks in just 10 minutes

Salmon is both healthy and versatile so it’s perfect as the main ingredient in any meal.

And those after a hearty dish packed with fresh flavours should look no further than Jamie Oliver’s marinated fillet recipe.

Sharing the dish on his website, Jamie said: “This easy salmon is gorgeous and juicy inside, dark and sticky outside – the perfect contrast.”

The meal comprises Asian-inspired flavours including coriander, lemongrass and ginger for a fragrant marinade that’s topped off with a “chilli kick”.

While the recipe is easy to follow, it’s super quick too, taking just 10 minutes to cook the fish.

Ingredients

Serves six:

  • Two fresh lemongrass sticks
  • A bunch of fresh coriander
  • Fresh ginger – one 5cm piece
  • Four garlic cloves
  • Half a small bottle of low-salt dark soy sauce
  • One large sustainable salmon fillet, scaled and pin-boned
  • Four tablespoons of runny honey
  • Two red chillies
  • Four spring onions
  • Two limes

How to cook marinated salmon

Start by bashing up the lemongrass sticks then pick the coriander leaves and finely chop the bare stalks.

Prepare the ginger and garlic by peeling and finely grating both, then combine them with the lemongrass, coriander stalks, ginger, garlic and soy sauce.

Carefully rub this all over the salmon fillet then leave it to marinate for an hour or so, either in a plastic bag or on a tray covered with cling film.

Preheat the grill to its highest setting, then, when the salmon is ready to be cooked, remove it from the marinade, brush it with the honey and grill for 10 minutes.

While this cooks deseed the chillies and finely slice with the spring onions.

Jamie suggested forking up the cooked salmon a little “so everyone can see the lovely, dark, sticky outside and the juicy, pink fish underneath”.

To serve, sprinkle with the chillies and spring onions and top with the reserved coriander leaves followed by a squeeze of lime.
