Quickest omelette recipe takes just two minutes – and no frying pan required

Scrambled eggs are a great source of protein for any time of the day and they taste even better mixed into a seasoned omelette.

The versatile brunch dish can be flavoured with almost any dried herbs and spices and not forgetting, a range of fresh ingredients like vegetables and meat.

While many people prefer to cook this French meal in a frying pan, this recipe by Brandie, author of The Country Cook food blog is even quicker and easier to make.

Her “favourite quick and easy breakfast” can be cooked in the microwave using just three ingredients and one standard-sized mug.

She said: “We all love this because it can easily be tailored to our individual tastes and can be made simply or with all the fixings! I am excited to share it because it is absolutely something you can make every day without a lot of fuss.”

Ingredients

  • Two large eggs
  • One tablespoon of water
  • Salt and pepper to taste

Optional fillings:

  • Green peppers, finely diced
  • Yello onion, finely diced
  • Ham, finely chopped
  • Bacon, crumbled
  • Shredded cheddar cheese

Method

Start by spraying a microwave-safe mug with nonstick cooking spray, or lightly greasing it with some oil.

Crack two eggs into the microwave-safe mug and add one tablespoon of tap water before stirring with a fork to combine the liquid.

Season the eggs with salt and pepper, along with any other seasonings being used. Chilli flakes, garlic granules and dried herbs are all good options.

Add in the desired fillings, ensuring all are evenly diced to encourage a steady cooking time between all of them.

Microwave for one to two minutes (until eggs are cooked through and fluffy), then serve and enjoy.

Brandie said: “The cooking time can vary depending on the power of your microwave, but generally one to two minutes on high should be sufficient.

“Check the omelette after one minute and continue microwaving in 30-second intervals until the eggs are set.”
