Breakfast: Avocado Egg Boats

(Serves six)

Try something new with this tasty light breakfast. Packed with protein, it is the perfect way to start your day.

YOU NEED:

  • 3 avocados
  • 6 eggs, small
  • 1 tagine paste
  • 1 handful spinach, finely chopped
  • 1 tsp chilli flakes
  • 1 tsp pine nuts, crushed
  • 1 sprinkle sea salt

METHOD: Pre-heat the oven to 220C/440F. Cut the avocados in half and scoop out a bit of the flesh from the centre to ­create room for the egg.

Add a thin layer of tagine paste in the hole, then crack the egg into the hole. Sprinkle with the spinach, chilli flakes and pine nuts.

Add a pinch of salt and let this bake until the egg whites are cooked through.

This will take about five minutes.

Once cooked through, remove from the oven and serve.

Lunch: Salmon Rarebit

(Serves four)

Cheesy and delicious, this classic rarebit recipe makes the perfect ­weekend lunch or light meal. Best of all, you can rustle it up in a speedy ten minutes.

YOU NEED:

  • 300ml milk
  • 100g cheddar, grated
  • 40g plain flour
  • 1 tsp English mustard
  • 213g canned red salmon, drained and flaked
  • 4 slices granary bread (or wholemeal bread)

METHOD: Place the milk in a pan with the cheddar, flour and mustard and cook over a low heat, whisking continuously, until you have a smooth, thickened mixture.

Remove from the heat and fold in the salmon. Toast the bread lightly on both sides.

Top one side of each with the salmon and cheese mix.

Place the rarebit under a hot grill for two to three minutes until golden brown and bubbling. Serve with rocket to garnish.

On-the-go Snack: Buttercup Energy Balls

(Makes ten balls)

For an easy-to-make healthy snack, look no ­further than these almond butter energy balls, packed full of flavour, carbs and fibre.

YOU NEED:

  • 1 cup dates, pitted (if dry, soak in warm water for ten minutes then drain well)
  • 225g gluten-free rolled oats
  • ¼ cup dairy-free dark chocolate, roughly chopped
  • 1 tbsp chia seeds or sub flax or hemp seeds
  • 3 tbsp almond butter or peanut butter

METHOD: Blend the dates in a food processor or blender until they are in small pieces.

Add the oats, chocolate, seeds and almond or peanut butter and blend or mix until the ingredients are combined.

There should be consistently small pieces but it should not be overly processed and blended.

Roll the mix into one-inch balls. Pop into the fridge to set. Eat and enjoy.

Keep leftovers in an airlock container to store.

Dinner: Beef, Bean & Chorizo Pasta

(Serves four)

A satisfying pasta dish using thin-cut beef steaks that is on the table in 30 minutes.

YOU NEED:

  • 300g pasta shapes
  • 100g diced chorizo
  • 1 small onion, chopped
  • 1 garlic clove, crushed
  • 380g Morrisons British beef sizzle steaks, cut into strips
  • 250g cherry tomatoes, cut into quarters
  • 400g tin of chickpeas or mixed beans, drained
  • 100g frozen peas
  • 2 tbsps fresh parsley, chopped

METHOD: Cook the pasta according to the packet instructions, drain and set aside.

Meanwhile, heat a non-stick frying pan and cook the chorizo, onion and garlic for two to three minutes, stirring occasionally.

Add the beef and cook for one minute.

Add tomatoes, chickpeas or beans, peas and pasta and continue to cook for a further one to two minutes.

Season, if required, garnish with the parsley and serve immediately with a side salad and garlic bread.
