Mug cake recipes: How to make a cake with just a mug and a microwave

Sometimes all you need is a piece of cake, but making a cake from scratch can be too much effort. A mug cake takes a fraction of the time, leaves you with less washing up, and prevents you from indulging in an entire cake in an evening. Express.co.uk reveals the best mug cake recipes from BBC Good Food.

Chocolate mug cake recipe

Ingredients

  • 4 tbsp self-raising flour
  • 4 tbsp caster sugar
  • 2 tbsp cocoa powder
  • 1 medium egg
  • 3 tbsp milk
  • 3 tbsp vegetable oil or sunflower oil
  • a few drops of vanilla essence or other essence (orange or peppermint work well)
  • 2 tbsp chocolate chips, nuts, or raisins etc (optional)

Method

Step one

Add four tablespoons of self-raising flour, four tablespoons of caster sugar and two tablespoons of cocoa powder to the largest mug you have (to stop it overflowing in the microwave) and mix.

Step two

Add one medium egg and mix in as much as you can, but don’t worry if there’s still dry mix left.

Step three

Add the three tablespoons of milk, three tablespoons of vegetable or sunflower oil and a few drops of vanilla essence and mix until smooth, before adding two tablespoons of chocolate chips, nuts, or raisins, if using, and mix again.

Step four

Centre your mug in the middle of the microwave oven and cook on High for one and a half to two minutes, or until it has stopped rising and is firm to the touch.

Lemon and raspberry vegan mug cake

Ingredients

  • 3 tbsp dairy-free milk, such as oat milk
  • pinch lemon zest
  • 1 tsp lemon juice
  • 1 tbsp sunflower oil
  • 4 tbsp self-raising flour
  • 2 tbsp caster sugar
  • pinch bicarbonate of soda
  • 4 fresh or frozen raspberries
  • coconut cream or dairy-free ice cream

Method

Step one

Put the milk in a microwave-safe mug, add the lemon zest and juice and leave to sit for two to three mins.

It should start to look a bit grainy, as if it has split.

Stir in the sunflower oil, flour, sugar and bicarbonate of soda.

Mix really well with a fork until smooth.

Step two

Drop in the raspberries then microwave on high for a minute and a half or until puffed up and cooked through.

Step three

Serve with a drizzle of coconut cream, or a scoop of dairy-free ice cream if you like.

Melt in the middle mug cake

Ingredients

  • 2 tbsp sunflower oil
  • 1 medium egg
  • 2 tbsp plain flour
  • 3 tbsp light brown sugar
  • 1 tbsp cocoa powder
  • dash of vanilla extract
  • 1 tbsp boiling water
  • 1 soft chocolate truffle of your choice (we used Lindt Lindor)
  • ice cream or cream, to serve (optional)

Method

Step one

Using a fork, whisk all the ingredients, aside from the chocolate truffle, with a pinch of salt in a large mug (ours was 350ml).

Step two

Push the chocolate into the centre of the batter, and microwave the cake on high for 45 seconds until cooked on the outside with a liquid molten centre.

Serve hot with ice cream or cream, if you like.
