During twixmas (that boring time between Christmas and New Year) you need to treat yourself when you can.
All the Christmas food may have now been eaten, but that doesn’t mean depriving yourself of a sweet treat.
This cinnamon swirl mug cake from Taste This Now uses ingredients you’ll likely already have in your cupboards, and cooks in the microwave with no faff.
Not only is it gooey and warming, it’s incredibly easy to make (especially if you’ve gone through the turmoil of baking cinnamon rolls before, which is a finicky process).
Taste This Now shared their recipe with us. Here’s what you need to do.
For the cake itself:
- 4 tablespoons self raising flour (or 4 tablespoons of plain flour and a half teaspoon baking powder)
- 1 tablespoon light brown sugar
- Pinch of salt
- Eighth of a teaspoon cinnamon
- 4 chopped pecans (optional but very tasty)
- 2 tablespoons milk
- 1 tablespoon melted butter
For the swirl:
- Half teaspoon melted butter
- 1 teaspoon light brown sugar
- Half teaspoon cinnamon
For the icing:
- 1 tablespoon icing sugar
- Half teaspoon milk
Starting with the dry ingredients, then the nuts, then the wet ingredients, mix together your cake mix components in a mug.
Set your mug aside, and in a small bowl combine your swirl ingredients.
Gently fold your swirl into the mug mixture, taking care not to overdo it (you don’t want them to be totally combined, more marbled through.
Put your mug into the microwave for 1 minute and 15 seconds.
While this is cooking, use your swirl bowl (don’t rinse it out first) to make your icing. The residual cinnamon left will add a spiced touch.
Once your cake is done, pour the icing over the top.
